yesterday's soup... approximately

Every time I make soup it's different, which is a little sad on the days it works out perfectly, but this is life.

Pumpkin, butternut squash, sweet potato soup with leek and quinoa.


Fry a couple onions gently. One might even say sautée.
Add about 2 tsps cinnamon and 1 tsp curry powder to the oil and mix it about a bit.
Add half a small  peeled, chopped hokkaido pumpkin*, 2 small peeled and chopped sweet potatoes, one small butternut squash. Of course you can use big ones, if you want a big hape o' soup :)
Pour in enough cold water to slightly more than cover the veg - this can be trial and error, or just go with whatever your soup recipe says.
Add bouillion powder unless you're fancy and have stock ready, or any other insto-stock solution you like to go with. I chopped a leek and put it in too, fairly big slices, and put in a handful of quinoa  grain, for protein. I'm not a huge quinoa fan, so I like it in soup where I can't really taste it :)
Bring it all to the boil and then simmer for approx 15 mins.
Blend it with a handy hand blender, perhaps one your godmother gave you about 16 years ago and is still in perfect nick.

* you could add the whole thing, no problem, but I decided half way through I wanted to make cake with the rest. You can get these at the Dennis Healy organic market stalls, or a good organic veg shop. They're rich and tasty and full of good things for you, not the same as normal halloween pumpkins.

You know how much I love a good pumpkin!!! They sell them here for such a limited season (Halloween), but, in a huge stroke of good fortune, the dentist Hans has been going to is in the Jewish quarter of Antwerp, and he found some tiny grocers in the back streets that sell real pumpkins and excellent sweet potatoes! I was soooo excited.
I've never tried Quinoa, but I have some in the cupboard with all those good intentions :)
It's such good soup weather huh?
